  • 1 can (15 oz) cooked lentils rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
  • 1/4 cup fresh parsley chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine the rinsed and drained lentils, halved cherry tomatoes, diced cucumber, finely chopped red onion, diced bell pepper, and chopped fresh parsley.
  2. In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until well combined.
  3. Pour the dressing over the lentil mixture and toss gently to coat all ingredients.
  4. Serve immediately or chill for later.

Notes

You can add other vegetables like chopped celery, corn, or spinach. For extra flavor, consider adding crumbled feta cheese or toasted nuts.
