- Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
- Combine: In a large mixing bowl, combine the cooked lentils, chopped parsley, mint, green onions, diced tomato, and cucumber.
- Dress and serve: Pour the dressing over the lentil and herb mixture. Toss gently to combine. Serve immediately or chill for later.
