Method
- Cook the pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
- While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper.
- Sear the salmon for 3-4 minutes per side, until cooked through. Remove the salmon from the skillet and set aside. Flake the salmon into large pieces.
- Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Be careful not to burn it.
- Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and the sauce thickens slightly.
- Add the drained pasta, flaked salmon, chopped parsley, and lemon juice to the skillet. Toss to combine. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
- Season with salt and pepper to taste. Serve immediately.
Notes
For a lighter sauce, you can use half-and-half instead of heavy cream. You can also add vegetables like spinach or peas to the sauce.
