Ingredients
  

For the Soup
  • 1 pound Chicken cut into pieces
  • 1 piece Ginger sliced
  • 2 cloves Garlic smashed
  • 8 cups Water
  • 1 tablespoon Goji berries
  • 1 tablespoon Dried shiitake mushrooms soaked and sliced
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon White pepper to taste

Equipment

  • Large pot
  • Knife
  • Cutting board

Method
 

  1. In a large pot, combine chicken, ginger, garlic, and water.
  2. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Add goji berries and shiitake mushrooms. Continue to simmer for another 10 minutes.
  4. Season with salt and white pepper to taste.
  5. Serve hot.
