Love-Themed Fruit Salad

This recipe makes a fruit salad using a simple honey and citrus dressing. You can adjust the fruit based on what is available.

Ingredients
  

Fruit
  • 1 cup fresh blueberries
  • 1 cup peeled and diced kiwi fruit
  • 1 cup mandarin oranges, drained, or fresh mandarin/navel orange segments
  • 1 cup diced apples or pears
  • 1 cup halved grapes
  • 1/2 cup pomegranate seeds
Dressing
  • 1 tablespoon honey
  • 2 tablespoons orange juice Use 1 tablespoon orange juice and 1 tablespoon lemon juice for a tangier dressing.
  • 1 pinch cinnamon Use a very light pinch, less than 1/8 teaspoon.

Method
 

  1. Place the fruit in a serving bowl. If you use pears, toss them with a light squeeze of lemon juice before adding them to the salad.
  2. Whisk together the dressing ingredients (honey, orange juice, and cinnamon) and pour over the fruit.
  3. Toss the fruit and dressing to combine.
  4. You can make the fruit salad a couple of hours ahead of time. Be aware that the colors of the fruit may mix as the salad sits.

Notes

The fruit selection is flexible based on what is in season. You need about 5 to 6 cups of fruit total, not including the pomegranate seeds. Pomegranate seeds are recommended for color, texture, and flavor.
