Method
- Use a spiralizer to create noodles from the zucchini.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add the cooked shredded chicken, halved cherry tomatoes, and diced bell pepper to the skillet. Cook for 3-5 minutes, until heated through and vegetables are slightly tender.
- Add the zucchini noodles to the skillet. Toss gently with the other ingredients and cook for 2-3 minutes, until the zucchini noodles are tender-crisp. Be careful not to overcook.
- Season with salt and black pepper to taste.
- Divide the zucchini noodle mixture between two bowls. Top with grated parmesan cheese and chopped fresh basil.
Notes
You can add other vegetables like mushrooms or spinach. For a different protein, try shrimp or tofu.
