  • 1.5 cups all-purpose flour
  • 1 cup rolled oats not instant
  • 0.5 cup granulated sugar
  • 1 tsp baking soda
  • 0.5 tsp ground cinnamon
  • 0.25 tsp salt
Wet Ingredients
  • 0.5 cup unsalted butter softened
  • 0.5 cup unsweetened applesauce
  • 1 large egg
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, rolled oats, sugar, baking soda, cinnamon, and salt.
  3. In a separate medium bowl, cream together the softened butter and applesauce until well combined. Beat in the egg and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix with a spatula until just combined. Do not overmix.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden brown. The centers may still look slightly soft.
  7. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
