Marry Me Chicken

Ingredients
  

  • 2 boneless, skinless chicken breasts Chicken Breasts halved horizontally
  • 1 tablespoon Olive Oil
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
For the Sauce
  • 4 cloves Garlic minced
  • 1/2 cup Sun-Dried Tomatoes oil-packed, drained and chopped
  • 1 cup Chicken Broth
  • 1/2 cup Heavy cream
  • 1/4 cup Grated Parmesan Cheese
  • 2 tablespoons Fresh Basil chopped, for garnish

Method
 

  1. Pat the chicken breasts dry. Season both sides with Italian seasoning, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
  5. Stir in the heavy cream and Parmesan cheese. Cook, stirring, until the sauce thickens slightly, about 3-5 minutes.
  6. Return the chicken breasts to the skillet and spoon the sauce over them. Simmer for 2-3 minutes to heat through.
  7. Garnish with fresh basil before serving.

Notes

Serve this dish with pasta, rice, or crusty bread to soak up the delicious sauce.
