- Pat the chicken breasts dry. Season both sides with Italian seasoning, salt, and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Cook for 1 minute until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
- Stir in the heavy cream and Parmesan cheese. Cook, stirring, until the sauce thickens slightly, about 3-5 minutes.
- Return the chicken breasts to the skillet and spoon the sauce over them. Simmer for 2-3 minutes to heat through.
- Garnish with fresh basil before serving.

Serve this dish with pasta, rice, or crusty bread to soak up the delicious sauce.
