Meal Prep Chicken Casserole

Ingredients
  

For the Casserole
  • 2 cups cooked chicken shredded or diced
  • 1 can cream of chicken soup 10.5 oz
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup frozen mixed vegetables thawed
  • 1/4 teaspoon black pepper
For the Topping
  • 1 cup crushed butter crackers like Ritz
  • 2 tablespoons melted butter

Equipment

  • 9x13 inch baking dish
  • Large bowl
  • Measuring cups
  • Measuring spoons

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, milk, cheddar cheese, mixed vegetables, and black pepper. Stir until well combined.
  3. Pour the mixture into a greased 9x13 inch baking dish.
  4. In a small bowl, mix the crushed crackers with the melted butter. Sprinkle this mixture evenly over the top of the casserole.
  5. Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
  6. Let it stand for a few minutes before serving.

Notes

This casserole can be assembled ahead of time and baked when ready. For meal prepping, divide into individual containers after baking and cooling.
