Mediterranean Chickpea Salad

Ingredients
  

Salad
  • 2 cans chickpeas rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano

Method
 

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, and fresh parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill for later.

Notes

You can add feta cheese or a different type of olives if desired.
