Method
- Preheat your oven to 375°F (190°C). Grease or line a mini muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the egg, milk, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the crumbled cooked sausage.
- Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
- Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
You can use any type of cooked breakfast sausage. For a sweeter variation, you can add a tablespoon of maple syrup to the batter.
