Wet Ingredients
  • 3 ripe bananas, mashed about 1 1/2 cups
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon optional
  • 3/4 cup walnuts or pecans, chopped plus extra for topping

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, sugar, eggs, and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Add the dry ingredients to the wet ingredients. Mix until just combined. Do not overmix.
  5. Fold in the chopped nuts.
  6. Pour the batter into the prepared loaf pan. Sprinkle extra nuts on top if you wish.
  7. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before removing it to a wire rack to cool completely.

Notes

For a richer flavor, you can substitute brown sugar for the granulated sugar. If your bananas are not very ripe, the bread will be less sweet and moist.
