Molten Chocolate Lava Cakes

Make these individual molten chocolate lava cakes for a simple, rich dessert. They bake quickly and have a warm, liquid center.

Ingredients
  

  • 1/4 cup butter 2oz/57g
  • 1/3 cup bittersweet chocolate chopped (2oz/57g)
  • 1/4 cup granulated sugar 2oz/57g
  • 1 large egg
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon instant coffee powder optional
  • 1/4 cup all-purpose flour 1¼oz/35g
  • 1/4 teaspoon salt

Equipment

  • Two 6-ounce ramekins or oven-safe mugs
  • Baking sheet
  • Medium bowl

Method
 

  1. Preheat the oven to 400°F (200°C). Butter two 6-ounce ramekins or oven-safe mugs and place them on a baking sheet. Set them aside.
  2. In a medium bowl, add the butter and chocolate. Gently melt them either in the microwave or over a ban-marie.
  3. Once melted, whisk in the sugar, eggs, vanilla, and coffee until well combined.
  4. Stir in the flour and salt and mix until just combined. Evenly divide the batter between the two prepared dishes.
  5. Bake for 20 to 22 minutes or just until there is a jiggle in the center and the edges are set. A soft center gives you a liquid center.
  6. Remove the cakes from the oven and allow them to stand for 1 minute before carefully turning each cake out onto your serving dish. Enjoy straight away with some vanilla ice-cream.

Notes

Serve these cakes immediately after turning them out of the ramekins for the best molten center.
