- Pat the chicken breasts dry with paper towels. Season both sides with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
- Add the Boursin cheese, heavy cream, and chicken broth to the skillet. Stir until the Boursin cheese is melted and the sauce is smooth and creamy.
- Return the chicken breasts to the skillet and spoon the sauce over them. Let simmer for 2-3 minutes, allowing the chicken to warm through and the sauce to thicken slightly.
- Garnish with fresh chopped parsley before serving.
