No-Bake Cottage Brownie

This recipe makes a rich, fudgy brownie without any baking.

Ingredients
  

For the Brownies
  • 1/2 cup butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips optional

  • 8x8 inch baking pan
  • Saucepan
  • Mixing bowls

Method
 

  1. Line an 8x8 inch baking pan with parchment paper.
  2. In a medium bowl, combine the melted butter and sugar. Mix well.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  6. If using, fold in the chocolate chips.
  7. Spread the batter evenly into the prepared baking pan.
  8. Refrigerate for at least 1 hour, or until firm.
  9. Cut into squares and serve.

Notes

Store leftover brownies in an airtight container in the refrigerator for up to 3 days.
