No-Bake Pumpkin Bites

These no-bake pumpkin bites are a quick and easy treat perfect for fall.

Ingredients
  

For the Bites
  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup peanut butter
  • 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips optional

Equipment

  • Mixing bowl
  • Spatula
  • Baking sheet
  • Parchment paper

Method
 

  1. In a mixing bowl, combine rolled oats, pumpkin puree, peanut butter, maple syrup, pumpkin pie spice, and salt.
  2. Stir until well combined. If using, fold in the chocolate chips.
  3. Roll the mixture into small balls, about 1 inch in diameter.
  4. Place the bites on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 15 minutes to firm up before serving.

Notes

Store leftover bites in an airtight container in the refrigerator.
