Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup unsweetened applesauce
  • 1/2 cup mashed ripe bananas about 2 medium bananas
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots about 3-4 medium carrots
  • 1/2 cup chopped walnuts or pecans optional
For the Frosting (Optional)
  • 8 ounces cream cheese softened
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, combine the applesauce, mashed banana, melted coconut oil, eggs, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the grated carrots and chopped nuts (if using).
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  9. For the frosting: Beat together the softened cream cheese, applesauce, and vanilla extract until smooth and creamy. Spread over the cooled cake.
