- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a food processor, combine the chicken chunks, steamed broccoli, breadcrumbs, beaten egg, Parmesan cheese, garlic powder, salt, and pepper. Pulse until the mixture is finely chopped and well combined, but do not over-process into a paste.
- Shape the mixture into small nugget shapes. You can use your hands or two spoons.
- Place the shaped nuggets onto the prepared baking sheet.
- Bake for 20-25 minutes, flipping halfway through, until the nuggets are golden brown and cooked through.
- Serve hot with your favorite dipping sauce.
Notes
For crispier nuggets, you can lightly spray them with cooking spray before baking. You can also add other seasonings like onion powder or paprika for extra flavor.
