One Pot Creamy Tomato Pasta

This recipe makes a simple, creamy tomato pasta dish using one pot for the pasta and a skillet for the sauce.

Ingredients
  

  • 8 ounces uncooked pasta
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 14 ounce can tomato sauce
  • 3/4 cup heavy/whipping cream
  • 1/4 teaspoon Italian seasoning
  • To taste Salt & pepper
  • To taste Freshly grated parmesan cheese for serving

Method
 

  1. Boil a large, salted pot of water for your pasta and cook it al dente according to package instructions.
  2. While the pasta cooks, add the butter to a skillet over medium-high heat. When it melts, add the garlic and sauté for about one minute, stirring constantly.
  3. Add the tomato paste, tomato sauce, cream, and Italian seasoning. Stir until smooth. Let the sauce cook for about 5 minutes or until it thickens. You may need to reduce the heat so it bubbles gently.
  4. Season the sauce with salt and pepper. If the sauce tastes too acidic, add a pinch of sugar.
  5. Drain the pasta. Toss it with the sauce. Add a splash of hot pasta water if the sauce becomes too thick. Serve immediately with parmesan cheese on top.

Notes

If you are making this truly one-pot, you can cook the pasta directly in the sauce mixture, adding extra water as needed until the pasta is cooked through.
