One Pot Taco Pasta Crowd Pleaser

This recipe makes a simple, one-pot taco pasta dish suitable for a large group.

Ingredients
  

  • 1 lb ground beef
  • 1 can tomato, diced (15 oz - 425g)
  • 1 can whole kernel corn, (15 oz - 425g)
  • 1 can tomato sauce, (15 oz - 425g)
  • 2 cups water
  • 1 package taco seasoning
  • to taste salt
  • to taste pepper
  • 2 cups elbow macaroni, uncooked
  • 1.5 cups colby jack cheese

Equipment

  • Large pot

Method
 

  1. Brown the ground beef in a large pot over medium-high heat. Drain the fat and return the beef to the pot.
  2. Add the taco seasoning, water, diced tomatoes, corn, and tomato sauce. Bring the mixture to a boil.
  3. Add the uncooked macaroni and reduce the heat to low. Cover and simmer for 10 to 15 minutes, stirring occasionally, until the pasta is cooked through.
  4. Remove the pot from the heat. Sprinkle the cheese on top and cover the pot.
  5. Serve the pasta once the cheese is melted.
