- Heat olive oil in a skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides.
- Add the minced garlic, Italian seasoning, salt, and pepper to the skillet. Cook for another 1-2 minutes until the garlic is fragrant.
- In a mixing bowl, combine the cooked chicken, mayonnaise, cheddar cheese, and Monterey Jack cheese. Stir until well combined.
- Warm the tortillas according to package directions. Spoon the chicken and cheese mixture evenly into the center of each tortilla.
- Fold in the sides of the tortillas and then roll them up tightly to form wraps.
- Serve immediately. Garnish with fresh parsley if desired.

For extra flavor, you can add a pinch of red pepper flakes to the chicken mixture.
