Oven-Baked Feta Potatoes

These oven-baked feta potatoes are crispy on the outside and tender on the inside. The feta cheese melts into a creamy sauce, making them a flavorful side dish.

Ingredients
  

For the Potatoes
  • 1 kg Potatoes cut into 1-inch cubes
  • 1/4 cup Olive oil
  • 1 tsp Dried oregano
  • 1/2 tsp Garlic powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
For the Feta Topping
  • 200 g Feta cheese crumbled
  • 2 tbsp Fresh parsley chopped
  • 1 clove Garlic minced

Equipment

  • Baking sheet
  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
  2. In a large bowl, toss the potato cubes with olive oil, dried oregano, garlic powder, salt, and black pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  4. Bake for 25 minutes, then remove from the oven and stir the potatoes.
  5. Sprinkle the crumbled feta cheese, minced garlic, and chopped parsley over the potatoes.
  6. Return the baking sheet to the oven and bake for another 20 minutes, or until the potatoes are tender and the feta is melted and slightly golden.
  7. Serve hot.

Notes

You can add a squeeze of lemon juice before serving for extra brightness.
