Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  7. In a medium saucepan, melt the 2 tablespoons of butter over medium heat. Stir in the chopped pecans and brown sugar. Cook for 2-3 minutes, stirring constantly, until the sugar is melted and the mixture is fragrant.
  8. Press a spoonful of the pecan crunch mixture onto the top of each dough ball.
  9. Bake for 12-15 minutes, or until the edges are lightly golden.
  10. While the bites are baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach desired consistency.
  11. Once the bites are out of the oven, let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
  12. Drizzle the glaze over the cooled bites.
  13. Let the glaze set before serving.

Notes

Store any leftover Pecan Crunch Glazed Bites in an airtight container at room temperature for up to 3 days.
