Method
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
- In a medium saucepan, melt the 2 tablespoons of butter over medium heat. Stir in the chopped pecans and brown sugar. Cook for 2-3 minutes, stirring constantly, until the sugar is melted and the mixture is fragrant.
- Press a spoonful of the pecan crunch mixture onto the top of each dough ball.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- While the bites are baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach desired consistency.
- Once the bites are out of the oven, let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
- Drizzle the glaze over the cooled bites.
- Let the glaze set before serving.
