Wet Ingredients
  • 3 large very ripe bananas mashed
  • 1/2 cup unsalted butter melted
  • 3/4 cup granulated sugar
  • 2 large eggs lightly beaten
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon optional

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until mostly smooth. Stir in the melted butter and sugar until combined.
  3. Mix in the beaten eggs and vanilla extract into the wet mixture.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon, if using.
  5. Gradually add the dry ingredients to the wet ingredients. Mix only until just combined. Do not overmix the batter.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the banana bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely before slicing.

Notes
