Method
- Preheat your oven to 400°F (200°C).
- Place the flatbread on a baking sheet.
- Spread the pesto evenly over the flatbread, leaving a small border.
- Distribute the cooked chicken over the pesto.
- Sprinkle the mozzarella cheese over the chicken.
- Add the halved cherry tomatoes and sliced red onion on top.
- Bake for 10-15 minutes, or until the cheese is melted and bubbly and the crust is golden.
- Slice and serve immediately.
Notes
You can add other vegetables like bell peppers or spinach. A drizzle of balsamic glaze after baking is also a nice addition.
