Pesto Chicken Flatbread

Ingredients
  

For the Flatbread
  • 1 large flatbread or naan
  • 1/4 cup pesto
  • 1 cup cooked chicken shredded or diced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup cherry tomatoes halved
  • 2 tablespoons red onion thinly sliced

Equipment

  • Baking sheet
  • Oven

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Place the flatbread on a baking sheet.
  3. Spread the pesto evenly over the flatbread, leaving a small border.
  4. Distribute the cooked chicken over the pesto.
  5. Sprinkle the mozzarella cheese over the chicken.
  6. Add the halved cherry tomatoes and sliced red onion on top.
  7. Bake for 10-15 minutes, or until the cheese is melted and bubbly and the crust is golden.
  8. Slice and serve immediately.

Notes

You can add other vegetables like bell peppers or spinach. A drizzle of balsamic glaze after baking is also a nice addition.
