Method
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and 1/2 cup of granulated sugar until light and fluffy. Beat in the vanilla extract.
- Gradually add the flour and chopped pistachios to the butter mixture. Mix until just combined, forming a soft dough.
- Place the remaining 1/4 cup of granulated sugar in a shallow dish.
- Roll the dough into 1-inch balls. Then, roll each ball in the sugar to coat.
- Place the cookie balls onto the prepared baking sheets, about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers should still be soft.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Store cooled cookies in an airtight container at room temperature for up to 5 days.
