Pizza Cottage Cheese Bake

Ingredients
  

For the Bake
  • 24 oz cottage cheese 2%
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
Optional Toppings
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup pepperoni slices

  • 9x13 inch baking dish
  • Mixing bowl

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine the cottage cheese, eggs, Parmesan cheese, parsley, Italian seasoning, garlic powder, black pepper, and salt. Mix well until everything is evenly combined.
  3. Pour the cottage cheese mixture into the prepared baking dish and spread it evenly.
  4. If using toppings, spread the pizza sauce over the cottage cheese mixture. Then, sprinkle the mozzarella cheese and arrange the pepperoni slices on top.
  5. Bake for 25-30 minutes, or until the bake is set and lightly golden brown on top. If you added cheese, bake until the cheese is melted and bubbly.
  6. Let the bake cool for a few minutes before serving.

Notes

You can customize the toppings with your favorite pizza ingredients like mushrooms, onions, or bell peppers.
