- Preheat your oven to 375°F (190°C).
- Press one pie crust into the bottom and up the sides of a 9-inch pie plate.
- In a mixing bowl, combine the cooked diced potatoes, chopped bacon, chopped onion, and shredded cheddar cheese.
- In a separate bowl, whisk together the beaten eggs, milk, salt, and pepper.
- Pour the egg mixture over the potato and bacon mixture and stir to combine.
- Pour the filling into the prepared pie crust.
- Place the pie on a baking sheet and bake for 40-45 minutes, or until the filling is set and the crust is golden brown.
- Let the pie cool for 10 minutes before slicing and serving.

You can add other vegetables like bell peppers or mushrooms to the filling if desired.
