Potato Bacon Pie

Ingredients
  

For the Crust
  • 1 package refrigerated pie crusts 14.1 oz
For the Filling
  • 2 cups diced potatoes cooked
  • 1 cup chopped cooked bacon
  • 1/2 cup chopped onion
  • 1/4 cup shredded cheddar cheese
  • 2 large eggs beaten
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Equipment

  • 9-inch pie plate
  • Skillet
  • Mixing bowl

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Press one pie crust into the bottom and up the sides of a 9-inch pie plate.
  3. In a mixing bowl, combine the cooked diced potatoes, chopped bacon, chopped onion, and shredded cheddar cheese.
  4. In a separate bowl, whisk together the beaten eggs, milk, salt, and pepper.
  5. Pour the egg mixture over the potato and bacon mixture and stir to combine.
  6. Pour the filling into the prepared pie crust.
  7. Place the pie on a baking sheet and bake for 40-45 minutes, or until the filling is set and the crust is golden brown.
  8. Let the pie cool for 10 minutes before slicing and serving.

Notes

You can add other vegetables like bell peppers or mushrooms to the filling if desired.
