Ingredients
  

For the Cheesecake Filling
  • 16 oz cottage cheese full fat
  • 1/4 cup maple syrup or to taste
  • 1 tsp vanilla extract
For the Crust
  • 1 cup graham cracker crumbs
  • 2 tbsp melted butter
Optional Toppings
  • 1/2 cup berries fresh or frozen
  • 2 tbsp chopped nuts

Method
 

  1. Combine cottage cheese, maple syrup, and vanilla extract in a food processor. Blend until smooth.
  2. In a separate bowl, mix graham cracker crumbs and melted butter.
  3. Layer the graham cracker mixture at the bottom of four small jars or bowls.
  4. Spoon the cottage cheese mixture over the crust.
  5. Top with berries and nuts, if desired.
  6. Chill for at least 30 minutes before serving.

Notes
