For the Bake
  • 1 can (15 oz) pumpkin puree not pumpkin pie filling
  • 16 oz cottage cheese full fat recommended
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a small baking dish.
  2. In a large bowl, combine the pumpkin puree, cottage cheese, eggs, maple syrup, pumpkin pie spice, vanilla extract, and salt. Whisk until smooth and well combined.
  3. Pour the mixture into the prepared baking dish.
  4. Bake for 30-35 minutes, or until the center is set and a knife inserted near the center comes out clean.
  5. Let cool slightly before serving. Serve warm.
