Ingredients
  

Pancakes
  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice
  • 1/4 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tbsp maple syrup optional, for sweetness

Method
 

  1. Combine cottage cheese, eggs, pumpkin puree, vanilla extract, and maple syrup (if using) in a blender. Blend until smooth.
  2. Add pumpkin pie spice, whole wheat flour, and baking powder to the blender. Blend again until just combined. Do not overmix.
  3. Heat a lightly oiled griddle or frying pan over medium-high heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Cook for about 2-3 minutes per side, or until golden brown and cooked through.
  6. Serve warm with your favorite toppings.

Notes

You can adjust the sweetness by adding more or less maple syrup to the batter. If you don't have pumpkin pie spice, you can use a mixture of cinnamon, nutmeg, and ginger.
