Method
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic, thyme, and sage. Cook for 1 minute more until fragrant.
- Pour in vegetable broth and bring to a simmer.
- Stir in cooked wild rice and pumpkin puree.
- Reduce heat and simmer for at least 15 minutes to allow flavors to meld.
- Stir in heavy cream and heat through, but do not boil.
- Season with salt and pepper to taste.
Notes
Serve hot. Garnish with fresh parsley if desired.
