Pumpkin Wild Rice Soup

Ingredients
  

For the Soup
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 4 cups vegetable broth
  • 1 cup cooked wild rice
  • 1 cup pumpkin puree
  • 1/2 cup heavy cream
  • Salt to taste salt
  • Black pepper to taste black pepper

Equipment

  • Large pot
  • Cutting board
  • Knife

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, thyme, and sage. Cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and bring to a simmer.
  5. Stir in cooked wild rice and pumpkin puree.
  6. Reduce heat and simmer for at least 15 minutes to allow flavors to meld.
  7. Stir in heavy cream and heat through, but do not boil.
  8. Season with salt and pepper to taste.

Notes

Serve hot. Garnish with fresh parsley if desired.
