Pumpkin Yogurt Parfaits

Ingredients
  

For the Parfait
  • 2 cups plain Greek yogurt
  • 1/2 cup pumpkin puree not pumpkin pie filling
  • 2 tablespoons maple syrup or to taste
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1 cup granola
  • 1/4 cup chopped pecans optional

Method
 

  1. In a medium bowl, combine the Greek yogurt, pumpkin puree, maple syrup, pumpkin pie spice, and vanilla extract. Stir until well combined.
  2. In four serving glasses, layer the pumpkin yogurt mixture with granola. Start with a layer of yogurt, then granola, and repeat until the glasses are full.
  3. Top with chopped pecans, if desired.
  4. Serve immediately or chill for later.

Notes

You can adjust the sweetness by adding more or less maple syrup. Feel free to substitute other nuts or seeds for the pecans.
