Quick Turkey Taco Rice Bowls

This recipe makes simple, fast taco rice bowls suitable for weekly meal preparation.

Ingredients
  

  • 4 cups cooked rice
  • 1 lb ground turkey or beef
  • 1 taco seasoning Use your preferred amount
  • 1 cup frozen corn kernels
  • 1 15oz. can black beans Rinsed and drained
  • 4 oz cheese About 1 cup shredded
  • 1 1/3 cup salsa
  • 2 green onions Sliced for garnish

  • Large skillet
  • Measuring cups and spoons

Method
 

  1. Cook the ground turkey or beef in a large skillet over medium heat until browned. Drain any excess fat.
  2. Stir in the taco seasoning, frozen corn, and drained black beans into the skillet with the meat. Cook for 3 to 5 minutes until the corn is heated through.
  3. Divide the cooked rice among four meal prep containers or bowls.
  4. Spoon the meat and bean mixture evenly over the rice in each container.
  5. Top each bowl with shredded cheese and a spoonful of salsa. If preparing ahead, keep the cheese and salsa separate until ready to eat.
  6. Garnish with sliced green onions before serving.

Notes

For meal prepping, store the meat mixture, rice, cheese, and salsa separately if you plan to reheat the bowls later. Reheat the meat and rice mixture, then add the cold toppings.
