Ingredients
  

For the Salad
  • 1 cup quinoa rinsed
  • 2 cups water
  • 2 apples cored and diced
  • 1/2 cup celery chopped
  • 1/4 cup red onion finely chopped
  • 1/4 cup walnuts chopped
For the Vinaigrette
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Cook the quinoa: In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed. Let stand for 5 minutes, then fluff with a fork.
  2. Prepare the vinaigrette: In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  3. Assemble the salad: In a large bowl, combine the cooked quinoa, diced apples, chopped celery, red onion, and walnuts.
  4. Dress the salad: Pour the vinaigrette over the salad and toss to combine. Serve immediately or chill for later.

Notes

You can add other ingredients like dried cranberries, pecans, or a sprinkle of cheese.
