Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
For the Coating
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 large eggs beaten

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, ranch seasoning mix, garlic powder, and black pepper. Stir to mix well.
  3. Dip each chicken piece into the beaten eggs, letting any excess drip off.
  4. Coat the chicken pieces thoroughly in the breadcrumb mixture, pressing gently to help the coating adhere.
  5. Place the coated chicken bites on the prepared baking sheet in a single layer.
  6. Bake for 18-20 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. Flip the chicken halfway through baking for even browning.
  7. Serve hot.
