Method
- Place pork ribs and water in a large pot. Bring to a boil, then reduce heat and simmer for 30 minutes. Skim off any foam.
- Add chopped onion, celery, carrots, minced garlic, salt, and pepper to the pot. Continue to simmer for another 30 minutes, or until ribs are tender.
- While the soup simmers, prepare the dumplings. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
- Stir in milk and melted butter until just combined. Do not overmix.
- Drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot and cook for 15-20 minutes, or until dumplings are cooked through.
- Serve hot.
Notes
You can add other vegetables like peas or corn to the soup if desired.
