Ricotta Pistachio Honey Bites

These bites are a simple and delicious treat, combining creamy ricotta, crunchy pistachios, and sweet honey.

Ingredients
  

For the Bites
  • 250 g Ricotta cheese Drained well
  • 1/2 cup Pistachios Finely chopped
  • 2 tbsp Honey Plus more for drizzling
  • 1/4 tsp Vanilla extract
  • Pinch Salt
For Garnish
  • Extra chopped pistachios
  • Extra honey

Equipment

  • Mixing bowl
  • Baking sheet
  • Parchment paper

Method
 

  1. In a mixing bowl, combine the drained ricotta cheese, finely chopped pistachios, 2 tablespoons of honey, vanilla extract, and a pinch of salt. Mix until well combined.
  2. Line a baking sheet with parchment paper.
  3. Using a spoon or a small cookie scoop, form small balls from the ricotta mixture. Place them on the prepared baking sheet.
  4. Chill the bites in the refrigerator for at least 10 minutes to firm up.
  5. Before serving, drizzle with extra honey and sprinkle with additional chopped pistachios.

Notes

You can adjust the amount of honey to your preference. For a firmer bite, ensure your ricotta is well-drained.
