- In a mixing bowl, combine the drained ricotta cheese, finely chopped pistachios, 2 tablespoons of honey, vanilla extract, and a pinch of salt. Mix until well combined.
- Line a baking sheet with parchment paper.
- Using a spoon or a small cookie scoop, form small balls from the ricotta mixture. Place them on the prepared baking sheet.
- Chill the bites in the refrigerator for at least 10 minutes to firm up.
- Before serving, drizzle with extra honey and sprinkle with additional chopped pistachios.

You can adjust the amount of honey to your preference. For a firmer bite, ensure your ricotta is well-drained.
