Sage Butternut Squash Gratin

Ingredients
  

For the Gratin
  • 1 large butternut squash peeled, seeded, and thinly sliced
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 cloves garlic minced
  • 2 tablespoons fresh sage chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Gruyere cheese grated
  • 1/4 cup Parmesan cheese grated

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a saucepan, combine the heavy cream, milk, minced garlic, chopped sage, salt, and pepper. Heat gently over medium heat until warm, but do not boil. Remove from heat.
  3. Arrange the sliced butternut squash in the prepared baking dish in an even layer.
  4. Pour the warm cream mixture over the squash.
  5. Sprinkle the Gruyere and Parmesan cheeses evenly over the top.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for another 15-20 minutes, or until the squash is tender and the top is golden brown and bubbly.
  8. Let the gratin rest for a few minutes before serving.

Notes

You can substitute other hard cheeses like cheddar or Swiss for the Gruyere. Ensure your butternut squash slices are uniform in thickness for even cooking.
