Ingredients
  

For the Gratin
  • 1 medium butternut squash peeled, seeded, and thinly sliced
  • 2 tablespoons butter
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1.5 cups heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh sage chopped
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the heavy cream, salt, and pepper. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally.
  5. Stir in the chopped fresh sage.
  6. Arrange the sliced butternut squash in the prepared baking dish. Pour the cream mixture over the squash.
  7. Sprinkle the grated Parmesan cheese over the top.
  8. Bake for 40-50 minutes, or until the squash is tender and the top is golden brown and bubbly.
  9. Let it rest for a few minutes before serving.

Notes

You can add a pinch of nutmeg to the cream sauce for extra flavor. If you prefer a crispier topping, you can add breadcrumbs along with the Parmesan cheese.
