- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- In a saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Pour in the heavy cream, salt, and pepper. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally.
- Stir in the chopped fresh sage.
- Arrange the sliced butternut squash in the prepared baking dish. Pour the cream mixture over the squash.
- Sprinkle the grated Parmesan cheese over the top.
- Bake for 40-50 minutes, or until the squash is tender and the top is golden brown and bubbly.
- Let it rest for a few minutes before serving.
Notes
You can add a pinch of nutmeg to the cream sauce for extra flavor. If you prefer a crispier topping, you can add breadcrumbs along with the Parmesan cheese.
