Sausage Potato Soup

Ingredients
  

Soup
  • 1 lb Sausage Italian or breakfast sausage
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken broth
  • 2 lbs Potatoes peeled and cubed
  • 1 cup Milk
  • 1/2 cup Heavy cream
  • 1/4 cup Cheddar cheese shredded
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Brown the sausage in a large pot over medium heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth and add the cubed potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  5. Stir in the milk and heavy cream. Heat through but do not boil.
  6. Stir in the shredded cheddar cheese until melted.
  7. Season with salt and pepper to taste.

Notes

Serve hot, garnished with extra cheese or fresh parsley if desired.
