Secretly Healthy Zucchini Brownies

These brownies are moist, fudgy, and packed with hidden vegetables. You won't even know they're healthy!

Ingredients
  

For the Brownies
  • 1 cup grated zucchini about 1 medium zucchini, squeezed to remove excess moisture
  • 1/2 cup unsweetened applesauce
  • 1/3 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup maple syrup
  • 1/2 cup dark chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  2. In a large bowl, combine the grated zucchini, applesauce, melted coconut oil, eggs, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. Stir in the maple syrup and chocolate chips (if using).
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  8. Let the brownies cool completely in the pan before cutting and serving.
