Ingredients
  

For the Salmon and Veggies
  • 1.5 lbs salmon fillet skin on or off
  • 1 lb broccoli florets
  • 1 lb baby potatoes halved or quartered
  • 1 medium red onion cut into wedges
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
Optional Garnish
  • 1 lemon cut into wedges
  • 2 tbsp fresh parsley chopped

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the broccoli florets, baby potatoes, and red onion with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
  3. Spread the vegetables in a single layer on a large baking sheet.
  4. Place the salmon fillet on top of the vegetables.
  5. Bake for 18-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
  6. Garnish with lemon wedges and fresh parsley, if desired.

Notes

You can substitute other vegetables like bell peppers, zucchini, or asparagus. Adjust cooking time as needed for different vegetables.
