Shrimp Scampi (Lighter)

A lighter version of classic shrimp scampi, perfect for a quick and healthy weeknight meal.

Ingredients
  

For the Shrimp
  • 1 lb Shrimp peeled and deveined
  • 1 tbsp Olive oil
  • 4 cloves Garlic minced
  • 1/4 cup Dry white wine or chicken broth
  • 2 tbsp Lemon juice freshly squeezed
  • 1/4 cup Chicken broth low sodium
  • 2 tbsp Fresh parsley chopped
  • 1/4 tsp Red pepper flakes optional
  • Salt to taste
  • Black pepper to taste

  • Large skillet
  • Tongs

Method
 

  1. Pat the shrimp dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the shrimp and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
  5. Pour in the white wine (or broth) and lemon juice. Bring to a simmer and cook for 1-2 minutes, scraping up any browned bits from the bottom of the skillet.
  6. Stir in the chicken broth and red pepper flakes (if using). Bring back to a simmer.
  7. Return the shrimp to the skillet. Add the chopped parsley and toss to combine. Cook for another minute to heat the shrimp through.
  8. Taste and adjust seasoning with salt and pepper if needed.
  9. Serve immediately.

Notes

Serve over pasta, zucchini noodles, or with crusty bread for dipping.
