Simple Apple Cake

Ingredients
  

Cake Batter
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 2 medium apples, peeled, cored, and diced such as Granny Smith or Honeycrisp
Topping (Optional)
  • 2 Tbsp brown sugar
  • 1/2 tsp ground cinnamon

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set this dry mixture aside.
  3. In a large bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined. Do not overmix.
  6. Gently fold in the diced apples.
  7. Pour the batter into the prepared cake pan and spread evenly.
  8. If using the topping, mix the brown sugar and cinnamon together. Sprinkle this mixture evenly over the top of the batter.
  9. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

You can substitute whole wheat flour for half of the all-purpose flour for added fiber. This cake keeps well covered at room temperature for up to three days.
