  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon sugar optional
  • 1/4 teaspoon salt

Method
 

  1. Combine cottage cheese and eggs in a blender. Blend until smooth.
  2. Add flour, baking powder, sugar (if using), and salt to the blender. Blend again until just combined. Do not overmix.
  3. Heat a lightly oiled griddle or frying pan over medium heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook for about 2-3 minutes per side, or until golden brown and cooked through.
  5. Serve warm with your favorite toppings.
