Simple Easter Cake

This recipe makes a straightforward cake suitable for an Easter celebration. It is a basic sponge cake that you can decorate as desired.

Ingredients
  

Cake Batter
  • 1 1/2 cups All-purpose flour Sifted
  • 1 cup Granulated sugar
  • 1/2 cup Unsalted butter Softened
  • 2 Large eggs
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Milk
  • 1 tsp Vanilla extract
Simple Glaze
  • 1 cup Powdered sugar
  • 2 tbsp Milk Or more, for desired consistency

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the sifted flour, baking powder, and salt. Set this dry mixture aside.
  3. In a separate large bowl, use an electric mixer to cream the softened butter and granulated sugar together until the mixture is light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Add the vanilla extract to the wet ingredients.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry mixture. Mix until just combined; do not overmix.
  7. Pour the batter into the prepared cake pan and spread it evenly.
  8. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. To make the glaze, whisk the powdered sugar and 2 tablespoons of milk together until smooth. Add more milk, a small amount at a time, if you need a thinner consistency.
  11. Drizzle the glaze over the cooled cake before serving.

Notes

You can add lemon zest to the batter for a brighter flavor. Decorate the cooled cake with colored sugar or small candies for an Easter theme.
