Ingredients
  

  • 1 tablespoon vegetable oil
  • 600 g rump steak fat trimmed, thinly sliced
  • 800 g stir-fry vegetables fresh or frozen mix
  • 175 g Celebrate Health Chinese Stir-Fry Recipe Base
  • 8 Iceberg lettuce cups
  • 1/3 cup roasted unsalted cashew nuts 50g, coarsely chopped

Method
 

  1. Heat half of the oil over high heat. Stir-fry beef in 2 batches for 1 to 2 minutes or until browned. Transfer the beef to a plate.
  2. Reheat the wok over high heat and add the remaining oil. Stir-fry vegetables for 3 to 4 minutes or until almost tender.
  3. Return the beef to the wok with the Chinese Stir-Fry Recipe Base and stir-fry for 1 to 2 minutes or until hot.
  4. Serve the stir-fry in lettuce cups sprinkled with the cashews.

Notes
