Method
- In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
- Beat in the egg and vanilla extract until just combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms.
- Divide the dough in half, wrap each half in plastic wrap, and chill for at least 30 minutes.
- Preheat your oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
- On a lightly floured surface, roll out one portion of the dough to about 1/4 inch thickness. Cut out shapes using cookie cutters.
- Place the cut-out cookies onto the prepared baking sheets.
- Bake for 8 to 10 minutes, or until the edges are lightly golden. Do not overbake.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Decorate as desired.

You can add food coloring to the dough for different colors. For easier cleanup, use silicone baking mats instead of parchment paper.
