Slow Cooker Chicken and Rice

Ingredients
  

Chicken
  • 1.5 lb boneless, skinless chicken breasts
Rice and Liquid
  • 1 cup uncooked white rice long grain
  • 2 cups chicken broth
Vegetables and Seasoning
  • 1 can cream of mushroom soup 10.5 oz
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Method
 

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a separate bowl, combine the uncooked rice, chicken broth, cream of mushroom soup, diced tomatoes, frozen mixed vegetables, garlic powder, onion powder, black pepper, and salt. Stir to combine.
  3. Pour the rice mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 4-6 hours, or until the chicken is cooked through and the rice is tender.
  5. Remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir to combine with the rice mixture.
  6. Serve hot.

Notes

You can substitute chicken thighs for chicken breasts if desired. Adjust cooking time as needed.
